Kaju ki barfi, also known as cashew fudge, is a popular Indian sweet made with ground cashews and sugar. Here's a recipe to make Kaju ki barfi:

Ingredients:

  • 2 cups of cashew nuts
  • 1 cup sugar
  • 1/2 cup water
  • 1/2 teaspoon cardamom powder
  • Silver leaf (optional)
  • Ghee for greasing

Instructions:

  1. Grind cashew nuts into a fine powder in a food processor or grinder. Sift the cashew powder to remove any large pieces or chunks.

  2. In a heavy-bottomed pan, mix sugar and water, and bring it to a boil over medium heat.

  3. Once the sugar syrup comes to a boil, add the cashew powder and mix well. Stir continuously to prevent any lumps from forming.

  4. Cook the mixture on medium heat until it starts to thicken and leaves the sides of the pan.

  5. Add cardamom powder and mix well.

  6. Grease a plate with ghee and transfer the mixture to the plate.

  7. Use a spatula or the back of a spoon to flatten the mixture and spread it evenly on the plate.

  8. Allow the mixture to cool for 10-15 minutes, then cut it into diamond-shaped pieces.

  9. Garnish with silver leaf (if using) and serve.

Enjoy your delicious Kaju ki barfi!
