Kaju ki barfi, also known as cashew fudge, is a popular Indian sweet made with ground cashews and sugar. Here's a recipe to make Kaju ki barfi:
Ingredients:
- 2 cups of cashew nuts
- 1 cup sugar
- 1/2 cup water
- 1/2 teaspoon cardamom powder
- Silver leaf (optional)
- Ghee for greasing
Instructions:
-
Grind cashew nuts into a fine powder in a food processor or grinder. Sift the cashew powder to remove any large pieces or chunks.
-
In a heavy-bottomed pan, mix sugar and water, and bring it to a boil over medium heat.
-
Once the sugar syrup comes to a boil, add the cashew powder and mix well. Stir continuously to prevent any lumps from forming.
-
Cook the mixture on medium heat until it starts to thicken and leaves the sides of the pan.
-
Add cardamom powder and mix well.
-
Grease a plate with ghee and transfer the mixture to the plate.
-
Use a spatula or the back of a spoon to flatten the mixture and spread it evenly on the plate.
-
Allow the mixture to cool for 10-15 minutes, then cut it into diamond-shaped pieces.
-
Garnish with silver leaf (if using) and serve.
Enjoy your delicious Kaju ki barfi!
