Diwali is a festival for which people wait throughout the year. For Diwali, people clean their houses and buy new clothes for this five-day-long festival. The festival of Dhanteras is celebrated first in the great festival of Diwali. After this, the festival of Narak Chaturdashi, then Diwali, and then Govardhan Puja is celebrated. On the day of Govardhan Puja, people worship Lord Shri Krishna. There is also a tradition of worshiping the cow on this day.

On the day of Govardhan Puja, people prepare special Annakoot vegetables and offer them. All seasonal vegetables are used in making this special vegetable. It is very tasty to eat but it is very difficult to make. In such a situation, today we are going to tell you an easy way to prepare Annakoot vegetables for Govardhan Puja.

Ingredients for making Annakoot vegetable
100 grams beans, one carrot, one radish, two tandas, one colocasia, 6-7 ladyfinger, 2-3 parwal, one capsicum, half gourd, one raw banana, 100 grams sagri, small pumpkin, 4-5 tomatoes, one Ginger, 2-3 green chillies, some green fenugreek, two potatoes, two to three brinjals, one cauliflower, 100 grams green coriander.

Necessary spices for making vegetables
Oil, asafoetida, cumin, turmeric powder, coriander powder, red chili powder, dry mango powder, garam masala, salt.

Method
To make Annakoot vegetables, first, wash all the vegetables thoroughly and chop them finely. Cut leafy vegetables and keep them aside. After this, cut green chilies and tomatoes and keep them aside. Keep in mind that grate the ginger, so that a big slice of it does not come into the mouth and spoil the taste.

Now to make the vegetable, heat oil in a pan and add asafoetida and cumin seeds to it. When cumin seeds are roasted, add turmeric powder and coriander powder to it and fry lightly. Then add green chillies, and ginger and fry the spices.

After this, add all the chopped vegetables to the pan and then add red chili along with salt to it. Finally, add a cup of water to this vegetable and let it cook. Now cover this vegetable and cook it.

Once the vegetables are cooked, add garam masala and mango powder to them. When the vegetable is ready, add chopped coriander over it. Now your Annakoot vegetable is ready. Now we can enjoy it.
