Ingredients to make Lauki Burfi
Gourd - 1 kg
Mawa - 250 grams
Cashew nuts chopped – 14-15
Cardamom powder - 1 tsp
Pistachio - 1 tsp
Ghee - 1/2 cup
Sugar - 250 grams
How to make Lauki Burfi
If you want to make gourd barfi for fruits, then first of all choose a soft gourd and peel it off with the help of a peeler. Now cut the gourd from the middle and separate its seeds. After this, grate the remaining gourd and keep it separately in a bowl. Now put 2 teaspoons of desi ghee in a pan and heat it. After melting the ghee, add grated bottle gourd to it and fry it on low flame. During this, keep stirring the bottle gourd.
After roasting for a while, the bottle gourd will become soft, after that add sugar as per taste, mix and let it cook. Keep stirring the bottle gourd after a while until the sugar gets mixed well with the bottle gourd. When the bottle gourd is roasted well, then put the remaining desi ghee in it. After cooking for some time, mix mawa and dry fruits in the pan. Turn off the gas after cooking while stirring for some time.
Now add cardamom powder to the mixture, mix it well, and let it cool down. In the meantime, grease the bottom of a plate or tray with desi ghee. Put the prepared bottle of gourd mixture in it and spread it evenly all around. Spread chopped cashews and pistachios over it. Now let the mixture set. Barfi will set in about 1 hour, after that cut it into the desired shape with the help of a knife. Tasty and healthy gourd barfi is ready.
