Ingredients:

1 cup soya chunks

1/2 cup buckwheat flour (kuttu ka atta)

1 medium-sized potato, boiled and mashed

1 small onion, finely chopped

2 green chilies, finely chopped

2 tablespoons fresh coriander leaves, finely chopped

1 teaspoon ginger-garlic paste

1 teaspoon cumin powder

1 teaspoon coriander powder

1/2 teaspoon garam masala

Salt to taste

Oil for shallow frying

Instructions:

Begin by boiling the soya chunks in water for about 5 minutes. Drain and rinse them with cold water. Squeeze out any excess water and finely chop the soya chunks.

In a mixing bowl, combine the chopped soya chunks, mashed potato, chopped onion, green chilies, fresh coriander leaves, ginger-garlic paste, cumin powder, coriander powder, garam masala, and salt. Mix well to form a dough-like mixture.

Gradually add the buckwheat flour (kuttu ka atta) to the mixture, little by little, until it comes together and can be easily shaped into kebabs. The amount of flour may vary depending on the moisture content of the mixture.

Divide the mixture into equal portions and shape them into flat round kebabs or patties.

Heat oil in a non-stick pan or griddle over medium heat for shallow frying the kebabs.

Place the kebabs on the heated pan and cook for about 3-4 minutes on each side, or until they turn golden brown and crispy.

Remove the kebabs from the pan and drain them on a kitchen towel to absorb any excess oil.
