Many people do not eat bitter gourd but by making it differently, you can change the taste of the mouth of the family members. You can increase the taste of the vegetable by adding different spices to the stuffed bitter gourd. You can double the fun by making this delicious dish with roti for dinner. So let's know about the recipe to make it.
Material
Bitter gourd - 7-8 (small-sized)
Onion - 2-3 (finely chopped)
Cumin - 1/2 tsp
Fennel powder - 2 tbsp
Coriander powder - 2 tbsp
Turmeric - 1/2 tsp
Dry mango powder - 1 tbsp
Asafoetida - 1 pinch
oil as needed
salt to taste
Recipe
1. First wash the bitter gourd with water.
2. After this, peel the upper part with a knife.
3. Take out the peeled bitter gourd in a bowl, add salt, and keep it covered for 15 minutes.
4. Then make a long incision in the middle of the bitter gourd's peel take out the seeds and pulp inside the bitter gourd and keep it in a bowl.
5. Now apply salt inside and outside all the bitter gourds.
6. Add salt and keep them for half an hour.
7. After the fixed time, wash the bitter gourd 2-3 times so that the salt gets removed properly.
8. Put some oil in a pan and heat it on medium flame.
9. When the oil becomes hot, add asafoetida and fry it for some time.
10. Then put onion in the pan and fry till it turns brown.
11. When the onion is fried well, add turmeric, coriander powder, fennel powder and mix it.
12. After this add peeled bitter gourd pulp, seeds, dried mango powder, red chili powder, and salt to the pan and mix.
13. Fry all the ingredients for 5-7 minutes. After this, turn off the gas and keep the roasted mixture cool down.
14. When the mixture becomes slightly hot, take a bitter gourd and press the prepared mixture into it.
15. Stuff all the bitter gourds like this.
16. Add oil to the pan and when it is hot, add the stuffed bitter gourd.
17. Cover the pan and cook for 5 minutes.
18. After the fixed time, remove the lid and turn the bitter gourd.
19. After this, cook the bitter gourd for 5-7 minutes and reduce the flame to medium.
20. Turn off the gas after the fixed time. Your delicious stuffed bitter gourd is ready. Serve with roti.
