Ingredients required to make Amritsari Chole
Bakbuli Chana – 1 cup
Finely chopped onion - 2
Finely chopped tomatoes - 2
Chopped garlic - 7-8 cloves
Finely chopped ginger - 1-inch piece
Cinnamon - 1-inch piece
Bay leaves – 1-2
Big cardamom - 2-3
Green chilies cut lengthwise – 2-3
Cloves – 2-3
Tea bags – 1-2
Kasuri Methi – 1/2 tsp
Red chili powder - 3/4 tsp
Dry mango - 1/2 tsp
Coriander powder – 1 tsp
Turmeric - 1/4 tsp
Cumin - 1 tsp
Dry red chili - 1
Oil – 2 tbsp
salt - as per taste

Recipe
To make Punjabi Dish Amritsari Chole, first of all, take Kabuli Chana. Now keep them soaked in water for at least 6 hours. After this, take out these chickpeas from the water and put them in the pressure cooker. Now put two and a half cups of water in the cooker, add large cardamom, cloves, bay leaf, sweet soda, tea bag, and salt as per taste, close the lid of the cooker, and keep it on medium flame. Remember, it has to be boiled till 4 whistles. After this, turn off the gas and take them out.

After this, take a pan and put 2 tbsp oil in it, and put it on a medium flame of gas. When the oil is hot, put cumin seeds in it and it will crackle. After this add chopped ginger and garlic to it. Stir this mixture for a few seconds with the help of a ladle, then add finely chopped onions to it and fry for about 2 minutes. When the onions become soft and light brown, add other spices and salt to them.

Now take kasuri fenugreek and mash it with your hands and put it in this spice and fry it for about a minute. Then add finely chopped tomatoes and let the gravy cook. Cover the pan and cook for 2-3 minutes. Now take out the chickpeas from the cooker and put them in the wok and cook after mixing them well with a ladle. Now put long chopped green chilies in it. After this add mango powder and cook for 2 minutes and turn off the gas. This delicious Amritsari Chole can be served with paratha, roti, or rice for lunch or dinner.
