Tamarind 100 grams jaggery
50 grams
Red chili powder

Seeds 1 tsp
Curry leaves 3-4
Mustard seeds 1 tsp
Oil 1/2 cup
Red chili 2 dry
Garlic cloves 3-4
Pinch asafoetida
How to make ginger pickle?
To make ginger pickles, first of all, take ginger.
Then you wash it thoroughly and keep it dry.
After this, peel the ginger and cut it into long pieces.
Then you put hot water in a vessel and soak tamarind in it.
After some time, squeeze the tamarind and take it out in a bowl.
Then put fenugreek seeds in a pan and dry roast them.
After this, when it cools down, grind it in a mixie and make powder.
After this, heat the oil in a pan and fry the ginger slices.
Then when the ginger turns light brown, take it out and keep it aside.
After this, grind tamarind, red chili powder, turmeric, salt, and asafoetida in the blender.
Then add jaggery and fenugreek powder to it and blend once again.
After this, heat oil in a pan to prepare the tempering for the pickle.
Then fry mustard seeds and garlic in hot oil.
After this, fry curry leaves and red chilies till they become crispy, and turn off the gas.
Then put ginger slices and blended mixture in a bowl.
After this, add the tempering prepared from above and mix it well.
Then store the prepared pickle by filling it in a jar.
Now your spicy ginger pickle is ready.
