Rajma is also known as Red Kidney Beans in English. Rajma is not only tasty in taste but also very beneficial for health. Protein, magnesium and iron are also present in kidney beans along with soluble fiber. If you also want to maintain both taste and health, then with this recipe make Masala Rajma in Punjabi way.Ingredients for making Masala Rajma:
1 cup rajma
1 tbsp butter
1 tbsp oil
1 bay leaf
1 inch cinnamon stick
5 cloves 1 star anise
3-4 cardamom
1 onion, chopped
1 tbsp ginger garlic paste
2 green chilies, chopped
2 tomatoes, cut into small pieces
1 tsp turmeric 1 tsp red chilli powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala powder 1/2 tsp amchur powder
salt to tasteMethod to make Masala Rajma:
Wash and soak the kidney beans overnight or for 4-5 hours.
If there is no time to soak, put salt and two cups of water in the cooker and apply 4-5 whistles.
After the whistle, turn off the flame and let the pressure of the cooker dissipate.
Now put oil in a large pot and keep it to heat on low flame.
When the oil becomes hot, add bay leaves, cinnamon, cloves, cardamom

After frying for 1-2 minutes, add ginger garlic paste to the oil and fry it for 1-2 minutes.
After this, add onions, green chilies and tomatoes and mix well.
When the onion is almost melted, then add turmeric, red chili, amchur powder, garam masala and cumin powder and cook, mixing well.
When the masala starts leaving sharp, then add kidney beans with little water and mix it. Cover and cook for 15 minutes.
After the stipulated time, when the gravy becomes thick, put kasoori fenugreek and coriander leaves on the rajma, mix well and turn off the flame.
- Take out the rajma masala in a bowl and pour butter on top. - Rajma masala is ready. Serve with roti, rice or naan.
