Wheat flour rotis are eaten in every household in India. Round and soft thin rotis made of wheat flour taste delicious with anything from pulses to vegetables. To make these rotis, the right amount of water is used in the flour. There is also an art to kneading the dough. The better the dough is kneaded, the better the roti is made. Soft and fluffy rotis taste better to eat, but most women complain that the kneaded dough becomes tight or dry after keeping it. Then the rotis also become tight in the same way and do not puff up. Roti is not made from stored dough, hence women knead only as much dough as is required. But sometimes more dough is kneaded than required. Do not use too much water while kneading the dough.
Whether there is more or less flour, keep in mind that avoid using too much water while kneading it. Try to knead good dough using less water. Too wet dough does not last long and gets spoiled. If the dough becomes too loose then add some dry flour to it and knead it.
Apply oil to flour
While kneading the dough, add some oil or ghee to it. By doing this the roti remains soft for a longer time.
Use lukewarm water in flour
Water is used while kneading the dough but instead of normal water, use lukewarm water. This makes the dough soft. Apart from this, dough can also be kneaded with the help of milk.
Tips for storing kneaded dough
-If there is too much dough left after kneading then people keep it in the fridge but never keep the dough open in the fridge. Store the flour in an airtight container.
-While storing the dough, apply ghee or oil to it, then fill it in an airtight container and keep it in the refrigerator. This does not make it bad.
-Cover the dough with plastic wrap or aluminum foil and keep it in an airtight container.
