Eating them boiled or baked would be more beneficial because by eating them in this way excess fat will not go into the body. Tuber roots are anti-oxidants that stop the disintegrating action of the body. It contains carotene which helps in preventing cancer. The tuber has a lot of energy, so do not use them after frying.
As far as the use of grains is concerned, it is not that we will become sick or weak by not using wheat. The grains which were used before the arrival of wheat in India are beneficial even today. Use Jowar, Bajra, Maize, Ragi, Rajgira, etc. in indigenous grains. The thicker their dough, the better. Whole grain is very good for health. The rule of staying healthy through diet says that coarse grains should be consumed at least three times out of two times breakfasts and two times meals.
