Here's a quick and easy recipe for Palak Paneer Uttapam, a delicious and nutritious breakfast option:

Ingredients:

1 cup dosa batter

1 cup spinach (palak), blanched and pureed

1/2 cup crumbled paneer (Indian cottage cheese)

1 small onion, finely chopped

1 small tomato, finely chopped

1 green chili, finely chopped (optional)

1/2 teaspoon cumin seeds

Salt to taste

Oil or ghee for cooking

Instructions:

In a mixing bowl, combine the dosa batter and spinach puree. Mix well to ensure the spinach is evenly incorporated into the batter.

Heat a tawa or griddle over medium heat.

Take a ladleful of the dosa batter-spinach mixture and pour it onto the heated tawa. Spread it out gently to form a thick circle.

Sprinkle some crumbled paneer, chopped onion, tomato, green chili (if using), and cumin seeds evenly on top of the uttapam.

Drizzle a little oil or ghee around the edges and on top of the uttapam.

Cook the uttapam on medium heat for a few minutes until the bottom side turns golden brown and crispy.

Flip the uttapam and cook the other side for a few more minutes until it is cooked through.

Remove the cooked Palak Paneer Uttapam from the tawa and repeat the process with the remaining batter and toppings.

Serve the hot uttapams with chutney, sambar, or yogurt on the side.
