Moroccan Beetroot Salad Recipe
Ingredients- Curd - 1 cup, Cumin - 2 teaspoons coarsely ground, Garlic - 1-2 cloves finely chopped, Salt as per taste, Crushed black pepper as per taste, 2 beetroots chopped, 250 grams small spinach leaves, 7-10 Mint leaves coarsely chopped, 2 tbsp coriander leaves chopped, 1/2 cup vinegar

Method of making
For dressing

- Mix curd, cumin, and finely chopped garlic together in a bowl. Then add salt and black pepper to it. Keep the dressing in the refrigerator for an hour or two.

- Add vinegar to another bowl. Cut the beetroot into similar shapes, mix it in vinegar, toss, and let it rest for 10 minutes. After this, take out the beetroot from vinegar.

- In another bowl, mix beetroot pieces, spinach, chopped mint and coriander.

- Before serving, pour dressing over the salad.
