Method
Before making Amchoor Powder, first choose raw and green mangoes. Make sure that the mangoes are not ripe because we need sour mangoes. If the mango seems even a little soft, then move it aside. Now wash the raw mangoes thoroughly and remove their peel. After this, cut the peeled mangoes into thin slices.
If the mango pieces are thin, they will dry quickly. Cut the mangoes into pieces and spread them in a large tray or plate. Keep in mind that they should not be placed on top of each other. Now keep this tray in the sun and let the slices dry completely. Keep it in bright sunlight for at least three to four days. Keep turning the mango pieces in between.
When the mango slices are completely dry and crispy, grind them in a mixer grinder. After grinding, filter this powder through a sieve so that the big pieces go away. If there are any large pieces left, grind them again. Now your dry mango powder is ready, which you can use in various dishes.
Store it like this
Always use an airtight container to store it. This will prevent moisture from entering the powder and it will remain fresh for a long time. Along with this, keep the container of this powder in a cool and dry place. Store it in the kitchen cabinet to protect it from moisture and heat.
Keep the container away from direct sunlight. Sunlight can affect the color and taste of the powder. If you have made a large amount of dry mango powder, keep it in a separate small box for daily use. The rest can be packed and kept separately.
