Achari bhindi is a popular Indian dish made with okra (bhindi) and a blend of spices commonly used in Indian pickles (achar). Here is a simple recipe for achari bhindi:
Ingredients:
500 grams okra (bhindi)
2 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp fennel seeds
1 onion, sliced
1 tsp ginger paste
1 tsp garlic paste
1 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp red chilli powder
Salt to taste
1 tbsp lemon juice
Fresh coriander leaves for garnish
Instructions:
Wash the okra and pat dry with a paper towel. Trim the ends and cut them into 1-inch pieces.
Heat the oil in a pan over medium-high heat. Add the mustard seeds, cumin seeds, and fennel seeds and fry for a few seconds until they start to crackle.
Add the sliced onions and fry until they turn golden brown.
Add the ginger and garlic paste and fry for a minute until the raw smell goes away.
Add the turmeric powder, coriander powder, cumin powder, red chilli powder, and salt. Mix well and fry for a minute.
Add the chopped okra and mix well. Cover the pan and cook on low heat for 10-15 minutes until the okra is tender and cooked through.
Add the lemon juice and mix well. Garnish with fresh coriander leaves and serve hot with roti or rice.
