Ingredients for making mango longi
Raw mangoes: 2-3
Mustard oil
Fennel: 1 tsp
Fenugreek seeds: 1/2 tsp
Asafoetida: 1 pinch
Turmeric powder: 1/2 tsp
Red chilli powder: 1 tsp
Jaggery
Salt: According to taste
Black salt: 1/2 tsp
Coriander powder: 1 tsp
Method of preparation
To make raw mango long, first wash and peel the raw mango cut it into small pieces, and remove its seed. After this, heat mustard oil in a pan. When the oil is hot, add fennel and fenugreek seeds to it. After the spices crackle, add a little asafoetida to it.
When the masala is ready, add chopped raw mangoes to the pan. Now mix it well. After stirring the mangoes well, add turmeric powder, red chilli powder, and coriander powder to the pan. Now fry all these things while stirring well. After this, put jaggery in the pan and wait for it to melt. When it melts, add some water and let it cook on low flame.
When the mango becomes completely soft and the spices are mixed well, add salt and black salt to it. Finally, stir it well for two minutes and then turn off the gas. This mango lonji is ready, you can serve it with paratha. Along with this, store it in the fridge.
