A chemical is responsible for the water coming from the eyes while cutting onions. A chemical called syn-Propanethial-S-oxideis found in onions. Due to this chemical, water comes into the eyes. Syn-Propanethial-S-oxideaffects the lacrimal glands of the eyes, causing tears to start. Apart from this, research has been done on this subject in Japan as well. In this research, the cause of watery eyes has been attributed to the enzymelachrymatory-factor synthase. What happens is that when we chop an onion, the enzyme lachrymatory-factor synthase is released into the air. After this enzyme is converted into sulfenic acid, which irritates the eyes and tears start coming.
