Method

To make vada, first boil the potatoes and let them cool. After this, heat some oil in a pan. Now add mustard, cumin seeds, and curry leaves in. After this, add ginger-garlic paste and green chilies and fry well. Now add turmeric powder, garam masala, dry mango powder, and salt to it, and then mix well. Finally, add boiled potatoes and mix well with the spices. Now let the mixture cool down and make vada from it.

After this, now you have to prepare a gram flour batter, to which the vada will be added and coated. To prepare the batter, add gram flour, turmeric powder, red chili powder, asafoetida and salt in a bowl. Now prepare a thick batter by adding water little by little. The batter should not be too thin or too thick.

Now to fry the vada, first heat the oil in a pan. After this, dip the potato balls in the batter and fry in hot oil till they become golden brown. Take out the fried vada on tissue paper so that the excess oil drains out.

Finally, it is time to prepare the vada pav. For this, cut the pav from the middle and apply green chutney, garlic chutney and sweet chutney on both sides. Now place the fried vada in the middle of the pav. Now serve it hot. You can also serve fried green chilies with it.
