Here's a recipe for Suji Bites, a spicy and enjoyable snack that pairs well with evening tea:

Ingredients:

1 cup semolina (suji/rava)

1/4 cup yogurt

1/4 cup finely chopped onions

1/4 cup grated carrots

1/4 cup chopped bell peppers (capsicum)

2 tablespoons chopped coriander leaves

1 green chili, finely chopped (adjust to taste)

1/2 teaspoon ginger paste

1/2 teaspoon cumin seeds

1/2 teaspoon mustard seeds

A pinch of asafoetida (hing)

Salt to taste

Oil for shallow frying

Instructions:

In a mixing bowl, combine the semolina and yogurt. Mix well and let it rest for 10-15 minutes. This will allow the semolina to absorb the moisture.

Meanwhile, heat 1 tablespoon of oil in a small pan. Add cumin seeds and mustard seeds. Let them splutter.

Add asafoetida, chopped onions, grated carrots, and chopped bell peppers to the pan. Sauté for 2-3 minutes until the vegetables are slightly tender.

Add green chili, ginger paste, and salt. Mix well and cook for another minute. Remove from heat.

After the semolina has absorbed the yogurt, add the sautéed vegetables and chopped coriander leaves to the bowl. Mix everything together to form a thick batter. Adjust the salt if needed.

Heat a non-stick tawa or griddle over medium heat. Drizzle a little oil on the tawa and spread it evenly.

Take a spoonful of the batter and drop it onto the tawa, spreading it slightly to form a small round shape. Repeat to make more suji bites, leaving some space between them.

Cook the suji bites on medium-low heat until the bottom side turns golden brown. Drizzle a little oil on top and flip them carefully using a spatula.

Cook the other side until it also turns golden brown and crispy.

Remove the suji bites from the tawa and place them on a plate lined with a paper towel to absorb any excess oil.

Repeat the process with the remaining batter, adding more oil to the tawa as needed.

Serve the Suji Bites hot with your favorite chutney or sauce alongside a cup of tea.
