Date Barfi is a delicious and healthy Indian dessert made with dates, nuts, and a dash of cardamom. The easy recipe to make Date Burfi is as follows:
Ingredients:
2 cups dates, seeded and finely chopped
1 cup mixed nuts (cashews, almonds, pistachios), finely chopped
2 tbsp ghee
1/2 tsp cardamom powder
Dry coconut for garnishing (optional)

Instruction:
Heat ghee in a nonstick pan or wok on low heat.
Add the chopped dates to the pan and cook them on a low flame, stirring continuously, till they become soft and form a thick, sticky mixture. This will take about 5-7 minutes.
Add finely chopped mixed nuts and cardamom powder to the date mixture. Mix well to combine all the ingredients.
Cook the mixture for 2-3 minutes, while stirring continuously, till the nuts are well combined and the mixture becomes thick.
Take the pan off the heat and let the mixture cool slightly.
Grease a plate or tray with a little ghee.
Take out the hot mixture on a greased plate and spread it evenly with a spoon or ladle.
If you want, sprinkle coconut powder over the mixture and press it lightly to stick.
Let the mixture cool completely and set for a few hours at room temperature or in the refrigerator.
After the date barfi cools down and sets, cut it into desired shapes.
Store the khajur ki burfi in an airtight container.
