Along with idli and dosa, sambar is the soul of South Indian cuisine. People from every corner of the country like to eat sambar. South Indian people also make it in their homes. But if you follow these easy methods to make sambar, you will get the taste of traditional southern sambar.
Ingredients required
Oil – 3 tbsp
Coriander – 1 tbsp
Toor dal – 1 bowl
Salt – 1 tbsp
Sugar – 1 tbsp
Sambar masala – 3 tbsp
Tamarind pulp – 3 tbsp
Mustard – 2 tsp
Curry leaves – 7 to 8
Dry red chillies – 2 to 3

Okra – 2
Beans – 2
Tomatoes – 1
Pumpkin – 7 to 8 pieces
Onion – 1
Water (3 cups)

>First of all wash toor dal and add 2 spoons of salt to the cooker. Add 2 bowls of water in it and let it whistle for 2 whistles.
> Now place the pan on gas and add 2 tablespoons of oil. When the oil becomes hot, fry all the chopped vegetables in it.
> Now add some water to this fried vegetable and add 1 teaspoon of sugar. After this add sambar masala and let it cook for some time.
> After cooking for about 10-15 minutes, add tamarind paste and cooked lentils.
>After adding dal, add 1 cup water, reduce the flame, and let it cook for some time.
> On the other hand, in a small pan add 1 teaspoon oil, mustard seeds, dry red chili, and curry leaves and fry. It will have to be cooked in the pan for some time.
> Mix this paste with sambar and let the sambar cook for some more time. Once ready, garnish it with freshly chopped green coriander.
> Your South Indian-style sambar is ready.
