Raita, no matter what it is made from, not only enhances the taste of your food but is also very healthy. Be it lunch or dinner, people like to eat raita. There are many variations of raita and pumpkin raita with boondi and bottle gourd is quite popular. Rich in nutrients, this raita aids digestion and helps balance body temperature. Although children may avoid eating pumpkin as a vegetable, they often enjoy it in the form of raita. It is a delicious and easy-to-prepare dish. Let us learn the method of making pumpkin raita.
Material:
2 cups finely chopped pumpkin
1 ½ cups curd
½ teaspoon cumin powder
½ teaspoon red chili powder
1-2 green chilies finely chopped
2-3 tablespoons finely chopped coriander leaves
1 tablespoon oil
Salt as per taste

Instruction:
-Start by peeling and slicing the pumpkin, removing the thick outer skin.
-Heat oil in a pan on medium flame.
When the oil becomes hot, add chopped pumpkin and a little salt to it and mix well.
-Cook the pumpkin for 3-4 minutes while stirring occasionally.
- Once the pumpkin is cooked, turn off the flame and take it out in a bowl.
-Put curd in a large bowl and beat it until it becomes smooth and slightly runny.
-When the curd becomes smooth, add red chili powder, cumin powder, finely chopped green chilies, chopped coriander leaves, and salt as per taste. Mix well.
Now put the cooked pumpkin in a bowl and mix it with curd with the help of a spoon.
Your pumpkin raita is ready to serve.
