Recipe to make Aloo Kulcha:

To make delicious Aloo Kulcha, first, wash the potatoes thoroughly and boil them. When they boil, take them out of the cooker and peel them. Place boiled potatoes in a bowl and mash them well.

Now add red chili powder, garam masala, chaat masala, chopped green chilies, fresh coriander, and salt to the mashed potatoes. To make potato filling, mix these ingredients well.

Take flour in a separate bowl and add powdered sugar, baking soda, curd, and salt as per your taste. Knead the mixture into a soft dough. After kneading, cover the dough with a cloth and keep it aside for about 20 minutes.

After some time, take flour and add one spoonful of oil to it. Knead it well once again. Now make big lemon-sized balls from the dough.

Take one ball at a time and roll it into a small circle. Press the circle slightly using your fingers. Now add one spoon of potato mixture in the middle.

Fold the circle in half to cover the potato mixture and press the edges firmly to seal it. Flatten it gently using your fingers. Repeat this process to make all the kulchas.

Heat a non-stick pan or griddle on medium flame. Place a kulcha on the hot pan and lightly sprinkle water on the edge without coriander leaves. This helps the kulcha to stick to the pan.

When one side is cooked well and brown spots appear, turn it and cook the other side also. Flip it again to ensure that both sides are cooked evenly.

Take out the kulcha from the pan and apply some butter on top. Now you can serve it with curd or raita.

Enjoy your homemade Aloo Kulcha!
