Ingredients:
- 1 cup almonds
- 1 cup pitted dates
- 1/4 cup cocoa powder
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/4 cup chocolate chips
- 1 tbsp coconut oil
- 1/4 cup shredded coconut, for coating
Instructions:

In a food processor, blend the almonds until they are finely ground.

Add the dates, cocoa powder, vanilla extract, and salt to the food processor. Pulse the mixture until it is well combined and forms a sticky dough.

Take a tablespoon of the dough and roll it into a ball. Repeat with the remaining dough to make 12-14 truffles.

Place the truffles in the refrigerator to chill for 10-15 minutes.

In a small bowl, melt the chocolate chips and coconut oil together in the microwave or over a double boiler.

Dip each truffle into the melted chocolate mixture, using a fork to coat it completely. Place the truffle back on the baking sheet and sprinkle some shredded coconut on top.

Repeat with the remaining truffles until all are coated in chocolate and coconut.

Place the truffles back in the refrigerator to chill for another 10-15 minutes until the chocolate has hardened.

Serve the chocolate almond date truffles chilled and enjoy!
