Here is a recipe for Rabri Kulfi:

Ingredients:

1 litre of full-fat milk

1/2 cup sugar

1 tsp cardamom powder

1/2 cup chopped nuts (pistachios, almonds, and cashews)

6-8 kulfi moulds or popsicle moulds

Instructions:

In a heavy-bottomed pan, bring the milk to a boil over medium-high heat.

Once the milk starts to boil, reduce the heat to low and simmer for about 30-40 minutes, stirring occasionally, until the milk reduces to almost half.

Add the sugar, cardamom powder, and chopped nuts to the milk and continue to cook on low heat, stirring occasionally, until the milk thickens and becomes creamy. This may take another 15-20 minutes.

Once the rabri is thick and creamy, turn off the heat and let it cool down completely.

Once the rabri has cooled down, pour it into kulfi moulds or popsicle moulds, leaving a little bit of space at the top.

Cover the moulds with foil or plastic wrap and insert the sticks.

Freeze the kulfi for at least 5-6 hours or overnight, until it is completely set.

To serve, dip the moulds in warm water for a few seconds to loosen the kulfi from the mould.

Gently pull out the kulfi from the mould and serve immediately.
