Bananas, jackfruit, and bottle gourd koftas are very common, which you must have tried sometime or the other, but have you ever tried pumpkin koftas? Here is its recipe.

Material :
for kofta

250 grams pumpkin, 1/4 cup gram flour, 2 green chilies finely chopped, some green coriander finely chopped, 1 pinch asafoetida, 1/2 tsp baking soda, 1/2 tsp salt, 2 tsp curd, oil

For curry
1 tomato, 1 piece ginger, 2 green chilies, 1 tbsp coriander, 1 tbsp red chili, 1/4 tsp turmeric, 1 tsp sugar, 1 pinch asafoetida, 1/2 tsp fenugreek seeds, 1/4 tsp garam masala, as per taste Salt, 1 cup curd, 1 tbsp cream, some fresh coriander finely chopped

Method :
Peel and grate the pumpkin and keep it after adding salt.

After 10 minutes, take it in a cloth and squeeze it so that the water drains well.
Keep the water aside for gravy.

Mix soda and two teaspoons of oil in the bowl. Now add the soda mixture and all the ingredients to the pumpkin.

Mix well and make koftas and shallow fry them in oil.

Grind tomatoes, ginger, and green chilies. After churning the curd, mix coriander, red chili, and turmeric in it.

Heat 4 tablespoons of oil in a heavy bottom pan, add asafetida, and fenugreek seeds and add tomato paste and fry till the oil separates.

- Add red chili, turmeric, coriander, and a cup of water to the curd and mix it in the curry and stir till it boils.

Let the flame cook slowly. When thickened, add garam masala salt and add koftas and cook for five more minutes.

Serve by adding cream, and green coriander.
