Paneer do pyaza is a delicious North Indian dish made with soft and creamy paneer (cottage cheese) and plenty of onions. Here is a simple recipe to make it at home:
Ingredients:
200 grams paneer, cut into cubes
2 large onions, thinly sliced
2 tbsp oil
1 tsp cumin seeds
1 tsp ginger paste
1 tsp garlic paste
1 green chilli, finely chopped (optional)
2 tomatoes, pureed
1 tsp coriander powder
1 tsp cumin powder
1/2 tsp turmeric powder
1/2 tsp garam masala powder
1/2 tsp red chilli powder
Salt to taste
1/4 cup water
1/4 cup chopped fresh coriander leaves for garnish
Instructions:
Heat the oil in a pan over medium heat. Add the cumin seeds and fry for a few seconds until they start to crackle.
Add the sliced onions and fry until they turn golden brown.
Add the ginger and garlic paste and fry for a minute until the raw smell goes away.
Add the green chilli (if using) and the tomato puree. Mix well and cook for a few minutes until the tomato puree thickens.
Add the coriander powder, cumin powder, turmeric powder, garam masala powder, red chilli powder, and salt. Mix well and fry for a minute.
Add the paneer cubes and mix gently to coat them with the onion and spice mixture. Add 1/4 cup water and cover the pan. Cook on low heat for 5-7 minutes until the paneer is soft and cooked through.
Garnish with chopped coriander leaves and serve hot with roti or rice.
