Ingredients for Korma
Potato - 1
Peas - 1/4 cup
Beans - 1/4 cup
Capsicum - 1
Carrot - 1
Tomato - 1
Onion - 1
Ginger-garlic paste - 1 tsp
Coconut milk - 3/4 cup
Turmeric - 1/2 tsp
Red chilli powder - 1/2 tsp
Coriander powder - 1 tsp
Garam masala - 1 tsp
Ghee/Oil - 2 tbsp
salt - as per taste
Ingredients for Paste
Cashew - 8-10
Almonds - 8-10
Melon seeds - 1 tbsp
material for decoration
Pomegranate - 2 tbsp
Cashew - 1 tbsp
Raisins - 1 tbsp
Ghee - 1 tbsp
Method Of Making:
To make Navratan Korma, first soak melon seeds, cashews and almonds in water for half an hour. After this, take them out of the water and peel off the almonds. Now put all these ingredients in the mixer jar and grind them to make a paste. Take out the paste in a bowl and keep it aside. After this, cut potatoes, capsicum, carrots, tomatoes, onions and beans into small pieces.
Now put oil in a pan and heat it on medium flame. When the oil becomes hot, add onion and fry it. After 1-2 minutes, when the onion turns soft and golden, add ginger-garlic paste and fry it. Now add finely chopped tomato, red chilli powder, coriander powder, and turmeric to this spice and mix. After this, add the paste prepared from cashew-melon seeds and 1/4 cup of water and cook.
Cook this mixture for 2-3 minutes, after that, add all the chopped vegetables and mix well with the mixture. After this add a cup of water and coconut milk on top. Now cover the pan and let the vegetable cook on low flame for 10-15 minutes. Keep stirring the vegetable in between. Now take a small pan and heat ghee in it. When the ghee becomes hot, add cashews and fry them well and take them out on a plate. When the vegetable is fully cooked, turn off the gas and take out the vegetable in a large bowl. After this, decorate fried cashews, raisins and pomegranate seeds on it. Serve Navratan Korma with Paratha, Naan or Rice for lunch or dinner.
