Ingredients for Amritsar Chhole

Chickpeas - 1 cup

Finely chopped onion - 2

Finely chopped tomatoes - 2

Chopped garlic - 7-8 buds

Ginger finely chopped - 1 inch piece

Cinnamon - 1 inch piece

Bay leaves - 2

Large cardamom - 2

Green Chilies Long Chopped - 2

Cloves - 2

Tea bag - 1

Kasuri methi - 1/2 tsp

Chili Powder - 3/4 tsp

Amchoor - 1/2 tsp

Coriander powder - 1 tbsp

Turmeric - 1/4 teaspoon

Cumin - 1 tbsp

Dried cayenne pepper - 1

Oil - 2 tbsp

Salt - to taste

How to make Amritsar Chhole

To make Amritsari Chhole, first take chickpeas and soak them in water for at least 6 hours. Then drain the water from the chickpeas and put it in the cooker. Now put 2.5 cups of water in the cooker, add large cardamom, cloves, bay leaf, baking soda, tea bag and salt to taste, put the lid on the cooker and keep it on low flame. Cook the chickpeas till 4 whistles come in the cooker. Then turn off the gas.

Now take a pan and put 2 teaspoons of oil in it and keep it heated over medium heat. When the oil is hot, add cumin seeds and fry. When the cumin starts to crack, add finely chopped ginger and garlic. After stirring with ladu for a few seconds, add finely chopped onion and saute for about 2 minutes. When the onion is soft and light brown in color, add all the other spices and salt.

Now mash the kasuri fenugreek by hand and add to this spice and fry for about a minute. Then add finely chopped tomatoes and let the gravy cook. Cover the pan and cook for 2-3 minutes so that the spices and onions, tomatoes cook well. Now take the chickpeas out of the cooker and put them in a pan and mix it well with ladu and cook. Add long chopped green chillies. Then add curry powder and cook for 2 minutes and turn off the gas. Your delicious Amritsar Chhole is ready. Serve it with paratha or rice for lunch or dinner.
