Ingredients for Gatta Ki Sabji
to make gatte
1 small cup besan
1/2 tsp turmeric powder
1/2 tsp coriander powder
1/2 tsp red chili powder
a pinch asafoetida
3/4 tsp salt
1 tsp cumin
1/2 ginger, finely chopped
1 tsp mint
finely chopped
1/4 tsp baking soda
1 cup curd oil
to make a base
1 tbsp ghee
1 tbsp oil
5 chilies
1/2 tsp cumin
1 onion finely chopped
8-10 cloves
1 piece cassia
5-6 cloves garlic, finely chopped
1/2 tsp turmeric
3/4 tsp red chili powder
1/4 tsp coriander powder
1/4 tsp asafoetida
Salt 1 (chopped in the middle)
Green chilly
coriander leaves
cut into pieces

How to make gatte
Dry roast cumin and asafoetida and grind them in a mortar. Prepare the mixture by adding gram flour, spices, and cumin to a bowl. Add ginger and mint to it. Start kneading by adding about one or half teaspoon of whipped curd and soda to it. If the mixture seems dry, add more curd. One or two drops of oil can be added to it so that it can be kneaded easily. After that cut its long strips. Boil water in the pan and add the rolls made in them. They are very delicate, so handle them with care. After boiling, take out the strips and grind them into small pieces and deep fry them.
You can also give any shape as per your choice. When their color becomes light brown, then prepare the base for it.

To make a base
Put a tablespoon of oil in the pan, in which the gatte was fried, and take a tablespoon of ghee.
Add green chilies and cumin seeds to it and let them turn brown. After that add onion and fry it. Add cloves, cassia, and garlic to it. After this add turmeric, coriander powder, asafoetida, and red chili powder and mix it well. Roast all the spices and add salt. To moisten the pan, then add some water, so that all the spices are roasted and add some remaining curd to it. Add green chilies and mix well. When the edges start showing smoothness, add gatte to it. Mix well and add coriander leaves. Cook on low flame for five to seven minutes and serve hot.
