Here's a recipe for tasty and healthy Poha Nuggets that children will enjoy:

Ingredients:

1 cup flattened rice (poha)

1 cup boiled and mashed potatoes

1/2 cup finely chopped mixed vegetables (carrots, peas, bell peppers, corn, etc.)

1/4 cup finely chopped onions

2 tablespoons gram flour (besan)

2 tablespoons rice flour

1/2 teaspoon ginger paste

1/2 teaspoon garlic paste

1/2 teaspoon cumin powder

1/2 teaspoon garam masala

1/2 teaspoon red chili powder (adjust to taste)

Salt to taste

Oil for frying

Instructions:

Rinse the flattened rice (poha) under running water for a few seconds. Drain well and keep aside for about 10 minutes to soften.

In a mixing bowl, combine the softened poha, mashed potatoes, chopped vegetables, onions, gram flour, rice flour, ginger paste, garlic paste, cumin powder, garam masala, red chili powder, and salt. Mix everything together until well combined.

Shape the mixture into small, cylindrical nuggets or any desired shape. You can also use cookie cutters to create fun shapes.

Heat oil in a deep pan or kadai over medium heat for frying. Once the oil is hot, carefully drop a few nuggets into the oil. Fry them until they turn golden brown and crispy on all sides.

Remove the fried nuggets using a slotted spoon and drain them on a paper towel to remove excess oil.

Repeat the frying process for the remaining nuggets.

Serve the Poha Nuggets hot with ketchup, chutney, or any dip of your choice.
