Besan Gatte vegetable is known for its special taste. This vegetable made in Rajasthani style is very much liked. Ingredients for Gatte
Gram flour – 1 cup
Curd – 2 tbsp
Kashmiri red chilli – 1/4 tsp
Turmeric – 1/4 tsp
Coriander seeds – 1/2 tsp
Celery – 1/4 tsp
Asafoetida – 1 pinch
Desi ghee – 2 tbsp
Salt – as per taste

Ingredients for gravy
Onion finely chopped – 1
Beaten curd – 1 cup
Cumin – 1 tsp
Fennel – 1/2 tsp
Kasuri Methi – 1 tsp
Ginger-garlic paste – 1 tsp
Kashmiri red chilli – 1 tsp
Coriander powder – 1/2 tsp
Cumin powder – 1/4 tsp
Garam masala – 1/4 tsp
Asafoetida – 1 pinch
Bay leaf – 1
Green coriander chopped – 2-3 tbsp
Oil – 2 tbsp
Salt – as per taste

Recipe
- First of all, put gram flour in a big bowl. Add crushed coriander seeds, carom seeds, red chili powder, turmeric, and a pinch of asafoetida and mix.
- After this, add 2 tbsp desi ghee, curd, and salt in gram flour and prepare the dough by mixing it.
- The flour should be mixed well and become soft. Add 2 tbsp water to it and knead the dough.


- It has to be kneaded by kneading until the dough becomes very soft. If you knead the dough by applying oil on your hands, it will not stick.
- Now take little by little dough and roll it into a roll. After this, pour water into a big vessel and boil it.
- After the water boils, put the prepared cylindrical balls in it.
- Boil it for 10-12 minutes, so that the Gatte becomes soft properly. After this, filter the balls and keep them on a plate.
Now start the process of making gravy. For this, put 2 tablespoons of oil in a pan and heat it.
- After the oil is hot, add whole cumin, bay leaves, fennel, Kasuri fenugreek, and a pinch of asafoetida and fry.
- After frying for some time, add finely chopped onion to the spices and cook while stirring.
When the onion turns golden brown, add garlic-ginger paste to it and fry.
After this, add turmeric, red chili powder, cumin powder, and coriander powder to the pan and mix well.
Cook the spices on low flame. After some time, add 1 cup of water to the pan.
- If you want, you can use boiled gatta water.
Now add 1 cup curd to the pan and let the gravy boil. During this time keep stirring the gravy continuously.
When the gravy starts boiling, add gram flour gattas to it and mix well with the help of a ladle.
After this, add salt cover the vegetable, and cook for 10 minutes. When gattas are boiled with gravy, the gravy will be absorbed well.
Then add garam masala and green coriander leaves to the vegetables and mix.
- After cooking for 1-2 minutes, turn off the gas. Gram flour gatte curry is ready.
