Curd-Sev Ki Sabzi is a delicious and tangy Indian dish made with yogurt and crispy sev (fried gram flour noodles). Here's a recipe for Curd-Sev Ki Sabzi:

Ingredients:

1 cup thick yogurt (curd)

1/2 cup sev (fried gram flour noodles)

1 tablespoon oil or ghee

1/2 teaspoon mustard seeds

1/2 teaspoon cumin seeds

A pinch of asafoetida (hing)

1 green chili, finely chopped

1/2 teaspoon ginger paste

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder (adjust to your spice preference)

Salt to taste

1 cup water

Fresh coriander leaves, chopped for garnish

Instructions:

In a bowl, whisk the yogurt until smooth. Keep it aside.

Heat oil or ghee in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.

Add asafoetida (hing), green chili, and ginger paste. Sauté for a minute until fragrant.

Reduce the heat to low and add turmeric powder, red chili powder, and salt. Mix well to combine the spices.

Pour in the whisked yogurt and stir continuously to prevent curdling.

Add water and mix well. Increase the heat to medium and let the mixture come to a boil while stirring occasionally.

Once the sabzi comes to a boil, reduce the heat to low and simmer for about 5 minutes, stirring occasionally. This helps to cook the spices and thicken the gravy.

Turn off the heat and add the sev. Mix gently to incorporate the sev into the sabzi.

Garnish with fresh coriander leaves.

Serve the Curd-Sev Ki Sabzi hot with roti, paratha, or rice.
