Ingredients:
1 cup gram flour (besan)
1/4 cup rice flour
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon cumin seeds
A pinch of asafoetida (hing)
Salt to taste
Water (as needed)
Oil (for deep frying)
Assorted vegetables of your choice (such as onions, potatoes, bell peppers, spinach, etc.), thinly sliced
Instructions:
In a mixing bowl, combine gram flour, rice flour, turmeric powder, red chili powder, cumin seeds, asafoetida, and salt. Mix everything well.
Gradually add water to the mixture while stirring, until you obtain a thick batter consistency. The batter should be thick enough to coat the vegetables.
Heat oil in a deep frying pan or kadhai over medium heat.
Dip the thinly sliced vegetables into the batter, ensuring they are coated evenly.
Carefully drop the coated vegetables into the hot oil, a few at a time, and fry them until they turn golden brown and crispy. Flip them occasionally to ensure even frying.
Once the bhajiyas are crispy and golden, remove them from the oil using a slotted spoon and drain excess oil on a paper towel.
