Preheat oven to 450°F. Place the soaked chickpeas on a rimmed baking sheet and pat them dry. Add a tablespoon of oil to them and toss well. Spread an even layer of chickpeas on a baking pan and bake at 450°F for 20 minutes. Next, add green peas to the pan and bake at 450°F for about 10 minutes until the chickpeas and green peas are crisp.
After this, heat a large pan on medium heat and add 2 tablespoons of oil to it. Add onion and garlic to the pan and fry for 10 minutes. Add maida and curry powder to the pan and stir till it turns brown. Add butternut squash, cauliflower and potatoes to the pan and mix well.
Once the vegetables are well mixed, add the vegetable stock, black pepper and salt. Stir well and cover the pan and cook on low heat for 15 to 20 minutes until the vegetables become soft.
