Ingredients to make Kesar Bhaat
Rice - 1 cup
Milk - 1/2 cup
Cashew - 1 tbsp
Almonds - 1 tbsp
Raisins - 1 tbsp
Cardamom powder - 1/2 tsp
Coconut grated - 1 tsp
Melon seeds - 1 tsp
Desi ghee - 1 tbsp
Saffron threads - 1 pinch
Sugar – 1/2 cup (as per taste)
Kesar Bhaat Recipe
To make Kesar Bhaat, first, clean the rice, and then after washing them two-three times, soak them in water for half an hour. Now put desi ghee in the pan and keep it on medium flame to heat. When the ghee melts, add cashews, almonds, and raisins and roast them. When the dry fruits are well roasted, take them out in a bowl. Now put rice in the pan with ghee and fry them.
After roasting the rice for some time, add half a cup of milk and cook it. Meanwhile, take some warm milk in a small bowl and mix saffron in it. After cooking rice and milk for 1 minute, add saffron water to it and cook the saffron rice while stirring. When milk and water remain half in the rice, then add sugar according to taste and cook it. Rice has to be cooked till it absorbs all the water.
When the rice water dries up completely, add cardamom powder to it and mix it well with the help of a big spoon then add roasted dry fruits on top and mix. After cooking for 1 more minute, turn off the gas. Saffron rice is ready for offering to Maa Saraswati. After offering bhog to the mother, distribute saffron rice as prasad to everyone.
