Achari paneer paratha is a delightful Indian stuffed bread that combines the tangy flavors of pickles (achar) with paneer (Indian cottage cheese). It's a perfect choice for a filling and flavorful meal. Here's a recipe to make achari paneer paratha:

Ingredients: For the Paratha Dough:

2 cups whole wheat flour

Salt to taste

Water for kneading

For the Achari Paneer Filling:

200 grams paneer, crumbled or grated

2 tablespoons mixed pickle (achar) masala (you can use any variety of pickle you prefer)

1/2 teaspoon red chili powder

1/2 teaspoon cumin powder

1/2 teaspoon coriander powder

Salt to taste

Chopped fresh coriander leaves for garnishing

Ghee or oil for cooking

Instructions:

In a mixing bowl, combine whole wheat flour and salt. Gradually add water and knead to form a soft and smooth dough. Cover the dough and let it rest for 15-20 minutes.

Meanwhile, in another bowl, mix crumbled or grated paneer with pickle masala, red chili powder, cumin powder, coriander powder, and salt. Mix well until the spices are evenly incorporated into the paneer.

Divide the dough into small portions and roll them into balls.

Take one dough ball and roll it into a small circle of about 3-4 inches in diameter on a lightly floured surface.

Place a spoonful of the paneer filling in the center of the rolled dough circle.

Bring the edges of the dough together to seal the filling and pinch off any excess dough.

Gently roll the stuffed dough ball into a larger circle of approximately 6-7 inches in diameter. Dust with flour as needed to prevent sticking.

Heat a tawa or griddle over medium heat. Place the rolled paratha on the hot tawa.

Cook the paratha on one side until small bubbles start to appear. Flip it and cook the other side.

Apply ghee or oil on both sides and cook until the paratha is golden brown and crispy.

Remove the paratha from the tawa and garnish with freshly chopped coriander leaves.

Repeat the process for the remaining dough balls and filling to make more parathas.

Serve the achari paneer parathas hot with yogurt, pickle, or any chutney of your choice.
